  1. You need 250 gm of Amla/Gooseberry.
  2. Prepare 250 gm of Jaggery/Gud.
  3. Get 1/2 tsp of Salt.
  4. Use 1 tbsp of Ghee.
  5. You need 1/2 tsp of Red Chilli powder.
  6. Provide 2 of Cinnamon sticks.
  7. Prepare 4 of Cloves.
  8. Get 4 of Green Cardamom.
  9. Use 4 of Black Peppercorns.
  10. You need 1/2 tsp of Cumin seeds.
  11. Prepare 1 of Bay leaf.
  12. Get 1 tbsp of Crushed Almonds.
  13. Provide 1 tbsp of Crushed Cashews.
  14. Use 1 tbsp of Raisins.

Steps to make Amla Jaggery Chutney:

  1. Pressure cook amla in 1/2 cup water for 2 whistles..
  2. Remove the seeds from the cooked amla and crush it coarsely..
  3. Roast pepper corn, cinnamons, cloves and cardamom on tava for a minute and grind it to make a fine powder..
  4. Crush almonds and cashews to make a coarse powder..
  5. Heat ghee in a heavy bottom pan and add cumin, cinnamon and bay leaves..
  6. When cumin start to crackle add the crushed amla in it and saute for a minute..
  7. Now add crushed jaggary, Almond, cashews, raisins and salt..
  8. Now cook on low heat and keep stirring till jaggery melts completely and then add grounded spices and red chilli powder..
  9. Keep stirring it till it thicken like honey..
  10. When done, let it cool down completely and store in a glass jar..
